Mang Inasal is a popular Filipino grilled chicken dish known for its distinct flavor and accompanying sauce. Here's a recipe to help you cook Mang Inasal with sauce:
INGREDIENTS:
6 pcs chicken leg quarters (or any chicken parts you prefer)
1/2 cup soy sauce
1/2 cup vinegar (preferably cane vinegar)
1/2 cup lemon soda (such as Sprite or 7-Up)
1/4 cup calamansi juice (or lime juice)
1 tablespoon minced garlic
1 tablespoon minced ginger
1 tablespoon brown sugar
1 teaspoon ground black pepper
1/2 teaspoon salt
Bamboo skewers (for grilling)
For the sauce:
1/4 cup soy sauce
1/4 cup vinegar
1 tablespoon minced garlic
1 tablespoon minced onion
1 tablespoon calamansi juice (or lime juice)
1 teaspoon sugar
1/4 teaspoon ground black pepper
1/4 teaspoon chili flakes (optional, for heat)
1 cup aswetes for coloring
Instructions:
In a large bowl, combine soy sauce, vinegar, lemon soda, calamansi juice, minced garlic, minced ginger, brown sugar, ground black pepper, and salt. Mix well to dissolve the sugar.
Add the chicken leg quarters to the marinade, ensuring they are completely submerged. Cover the bowl and marinate in the refrigerator for at least 1 to 2 hours, or overnight for better flavor.
Prepare the grill by preheating it to medium-high heat. If using charcoal, let the coals turn white before grilling.
While the grill is preheating, prepare the sauce by combining soy sauce, vinegar, minced garlic, minced onion, calamansi juice, sugar, ground black pepper, and chili flakes (if using) in a small bowl. Mix well and set aside.
Remove the chicken from the marinade and let excess marinade drip off. Thread the chicken onto bamboo skewers, piercing through the thickest part of each leg quarter.
Place the chicken skewers on the preheated grill and cook for about 10-15 minutes on each side, or until the chicken is cooked through and nicely charred. Baste the chicken occasionally with the remaining marinade during grilling.
Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Serve the Mang Inasal with steamed rice and the prepared sauce on the side.
