Recipe of blueberry custard Danish pastry
Puff pastry dough 140g
1/2 cup fresh blueberries
Powdered sugar 1,2 tbsp
1 lightly beaten egg for egg wash
For custard filling
2 cups of whole milk
2 large egg yolks
2 tbsp of cornflour
4 tbsp of sugar
1 tsp vanilla essence
Make a mixture of 1/2 cup milk 2 egg yolks and cornflour. Boil remaining 1 1/2 cup of milk with vanilla essence in a small pan. It will start boiling in 6 minutes on medium high flame. Strain mixture of egg yolks, milk and cornflour in boiling milk. Keep on stirring and cook it for 4 to 5 minutes until custard become thick, pour it in bowl and let it cool down for 30 minutes at room temperature then 30 minutes in fridge
Full Method
Preheat oven at 350°F for 15 minutes, unfold puff pastry dough on a board and roll it with rolling pin a little bit. Using pizza cutter make 9 square pieces of 3X3 inches. To make shape of Danish pastry make cut in the center of each square to make a small square inside it. Leave the corner of small square connected to the outer big square, fold all 4 corners of big square to the center of pastry and press it in the center to make a deep space for custard filling. Poke the center with a fork so it couldn’t rise while baking. Brush Danish pastry with lightly beaten egg and bake them for 23 minutes in preheated oven. Make them cool for 5 minutes then fill custard in them and decorate with fresh blueberries, dust some powdered sugar on them keep in fridge for 10 to 15 minutes. Note: if Danish pastries rises from the center while baking then push the center of pastry with the back of a spoon to make a well for custard filling then complete the baking time of pastry
