Instant Carrot and Green Apple Pickle ( Ready In 1 Hour)
Ingredients:
• 2 Granny Smith Apple
• 2 Carrots
• 3 Tbsp Ready Pickle Mix
• 2 Tsp Salt
• 3 Tsp White Vinegar
• 4 Tbsp Olive Oil (Or Any Oil Of Choice)
Method:
1) Peel the carrots using a potato peeler and cut them into thirds if they are medium size and into quarters if there are long.
2) Slice each piece lengthways into 3 - 4mm thick slices and cut them into thin fingers and put them in a dish . Repeat this with the remaining carrots.
3) Now take 1 apple at a time, cut it into quarters and cut the core out. Cut each piece into thirds and then into small pieces and put them in the dish with the carrots.
4) Add salt and vinegar to the dish with carrot and apples, mix it well and put it in the sun to dry slightly for 1 hour giving it a mix 2 - 3 times. Also cover the oil and pickle mix with a plastic wrap while waiting forb the apple and carrot to dry.
5) After 1 hour, bring it inside and add the pickle mix and mix it well.
6) Take a small frypan, put it on medium heat, add oil and heat it for 1 minute. Turn the heat off and add it to the apple and carrots and mix it well.
7) Instant apple and carrot pickle is ready and you can keep it in the fridge and serve it with your favourite curries.
