Creamy Alfredo Sauce Pasta | Plant Based Alfredo Macaroni

Ingredients:
- 100g macaroni/ elbow pasta
- 100g raw cashews (plain)
- approx. 400ml warm water total (added in 2 parts)
- 2 tbsp olive oil
- 1 crown of broccoli, chopped
- 1 carrot, chopped
- 1/4 cup onion, chopped
- 4 garlic cloves, chopped
- 1/2 tsp paprika powder
- 1/2 tsp garlic powder
- 1/2 tsp black pepper powder
- salt to taste
Serves: 2
Notes:
[- I like my pasta with a good amount of sauce but if you like yours with lesser, just increase the amount of pasta in the recipe to 150 or 200g. You could also keep the amount of pasta same but half every other ingredient.
- Soak the cashews for at least 20min before blending
- You can omit the veggies if you want or add something else instead
- It works well with fettuccine, rigatoni and penne pasta as well ]
