My homemade Jamaican Easter Bun is moist and delicious. It is a sweet spiced bread baked with raisins and soaked fruits in a loaf pan. I can’t imagine Easter without my delicious Easter bun, so gather your ingredients, and let’s bake!
INGREDIENTS
2 ounces butter (melted)
1 bottle(s) stout
1/4 cup wine (optional)
1 teaspoon(s) vanilla
1/2 tablespoon browning (less to your liking depending on how dark you want your bun)
1 tablespoon strawberry Jam (guava jam or other flavor jam to your liking)
1 medium egg
8 ounces dark sugar
1 pound counter flour
1 teaspoon nutmeg
1/4 teaspoon salt (optional or to taste)
1 teaspoon cinnamon powder
3/4 tablespoon baking powder
1/4 tablespoon baking soda
1 tablespoon mixed spice
1/4 pound(s) mixed peel, chopped
1/4 pound(s) raisins, soaked
DIRECTIONS
Melt butter and allow to cool, then add stout, wine, vanilla, browning, jam, and beaten egg.
Stir in the sugar and mix until all the granules are dissolved.
Mix together all the dry ingredients (flour, baking powder, basking soda, cinnamon powder, nutmeg, salt). Then, add the chopped mixed peel and raisins.
Combine liquid mixture with dry ingredients and mix well.
Scrape the batter into a greased loaf pan
Bake for 45 - 60 minutes in a preheated oven at 350°F or until a dry knife or a toothpick inserted comes out clean.
Cool on a cooling rack.
To Glaze: Combine 2 tablespoons honey with two tablespoons jam, two tablespoons butter and bring to a boil
Remove from flame and use a pastry brush to apply it over the surface of the bun.
Serve alone or with slices of cheese
