2 eggplants, trimmed and cut into 1/4" strips (lengthwise)
Salt and pepper
1 cup whole-milk ricotta cheese
4 oz fresh mozzarella, roughly chopped
4 tbsp Parmesan cheese, grated
2 tbsp parsley, fresh, chopped
2 tbsp olive oil
