I had my doubts. Sassy came up with an ideal to for a stuffed flank steak recipe smoked on the Traeger pellet grill I think you'll really like. We rolled it up in some leftover stuffing and it came out great. Flank steak is often an overlooked item in the meat section but I'm a new found lover of this cut. It isn't exactly stuffed, more like rolled then smoked. I used regular pellets, I think Pit Boss pellets, then smoked at 250 until the internal temperature came up to about 140. This was to make sure the leftover Thanksgiving stuffing was fully cooked.
I also used the MEATER probe with smart phone app to follow the cook. then to finish it off I double checked with the ThermoPro TP19 instant read meat thermometer.
