Hello Dear friends, Today we are not baking, today we are making one very elegant and tasty, fruity Ladyfinger Mascarpone Cake. This cake is perfect for the hot Summer days, when we like to stay away from the oven. I decorate the cake with chopped almonds and walnuts, strawberries and kiwi. Between the three layer I spread light Mascarpone cream mixed with whipping cream and I spread with berry jam. Each ladyfinger i dip in a almond milk and sugar mix. It's elegant enough for any Celebration or Family weekend lunch or dinner.

Elegant Mascarpone Fruit cake (no baking)
Equipment: One 10 inch. spring form pan
Ingredients: 17 oz. (500 gr. ) ladyfingers
13 oz. Mascarpone
473 ml. heavy whipping cream
4 -5 tablespoons of powdered sugar
6-7 tablespoons of berry jam
Milk mix to dip the ladyfingers: 500 ml. milk ( I am using almond milk) mix with 5 tablespoons of sugar.
5-6 tablespoons of chopped almonds and walnuts (to decorate)
10 strawberries
2 kiwis
Combine the whipping cream and sugar in a large bowl and beat with an electric mixer on medium-high until smooth, add Mascarpone.
Dip the ladyfingers in a milk and sugar mix. Place ladyfingers on the bottom and around the edge of a 10 inch. spring form pan. Add the cream, ( over the cream ) spread 3- 4 tablespoons of the jam. Add a second layer of ladyfingers, cream and jam. On the last layer of ladyfingers, spread only cream and decorate with chopped almonds, walnuts and fresh fruits. I am using 10 strawberries and 2 sliced kiwis. Brush the fruits with honey or jam. I am using 1 tablespoon of jam with 1/2 a teaspoon of water. This will make the fruits to look more shiny.
Leave the cake in the refrigerator for 3-4 hours to chill before serving.
