Today we are making an incredibly delicious, crispy but juicy chicken rolls. Stuffed with mozzarella or raclette cheese, sun dried tomatoes and pastrami and coated with breadcrumbs. Not finished yet, we still have to make the amazing garlicy sauce with fire roasted peppers and tomatoes.
Finished in the oven and topped with shredded mozzarella, this dish is an absolute game changer.

Ingredients:
• 500 g chicken thighs (3 boneless pieces)
• 150 g mozzarella (or raclette) cheese, sliced
• 8 strips of sun dried tomato
• 8 slices of pastrami
• 1 egg
• 1 cup flour
• 1 cup breadcrumbs
• 1 tsp salt
• ½ tsp black pepper
• 1 tbsp olive oil
For the sauce:
• 1 shallot, chopped
• 2 cloves of garlic, minced
• 1 bell or paprika pepper (fire roasted)
• ½ cup tomato puree
• 1 tbsp tomato paste
• 1 tsp salt
• ½ tsp dried oregano
• ½ cup shredded mozzarella
