Preparation time: 20 mins
Assembling time: 20 mins
Serving size: 8 dumplings
Ingredients:
3/4 cup sago
1 cup Gula Melaka (Palm sugar)
Red Bean Paste (refer to our video on how to make red bean paste [ Ссылка ] )
Method:
Boil chopped palm sugar with ½ cup water. Throw in a knotted pandan leaf. This will add a wonderful fragrant to the palm sugar syrup
Once boiled, switch off flame and set aside to cool
Pour ¾ cup sago into a clean pot
Pour hot water to more than cover the sago
Add knotted pandan leaf. The pandan leaf will result in a burstful of fragrant aroma when we cut open the dumpling wrapper prior to eating later
Let boil for about 20 minutes until the sago turns translucent
Meanwhile, shape red bean paste into balls
Clean and wipe dry banana leaf. Cut it into small squares
Remove pandan leaf from the boiling sago. Switch off flame. Pour sago through a sieve and run cold water to remove excess starch
Pour sago into a bowl and we are ready to start assembling the dumplings
Fold the banana leaf
Place it inside the plastic bag, pushing the leaf right to the bottom
Scoop sago into the bag making sure to fill the sides
Place a red bean paste ball and cover with more sago
Fold the bag and secure with a cellophane tape
Keep refrigerated for 2 hours before serving
