This Santoku knife has quickly become my new favorite! I've been using a chef knife for years, but this design produces outstanding results for slicing, dicing and mincing! A Santoku blade design is unique because the top of the knife is a straight line from the handle edge across the blade and curves down at the tip in a "sheep's hoof" style design. This varies significantly from a Western or French Chef's knife that is pointed and is used with a rocking motion of the blade on the board.

I find myself being able to get a more precise cut because this blade is incredibly sharp! I'm impressed!

Pros:
1) The blade is 12-15 degrees and razor sharp! Many knives are sharpened 20-30 degrees, but this is far better. It's beveled on both sides for right or left handed use.
2) I love the gorgeous Damascus style design! Stunning! Its called "Tsunami Rose" and the pattern is incredible. There's also a 3 metal mosaic rivet on the handle. The design touches are beautiful. This really sets it apart from a plain looking knife! (Gift quality!)
3) The high carbon stainless steel metal is incredibly strong and has a center of VG10 imported Japanese steel.
4) There's increased hardness of this blade because of cryogenic treatment with liquid nitrogen as well.
5) Damascus steel design is heat forged and folded into layers to produce a durable blade. The pattern also looks beautiful.
6) Full tang for best knife design (I once had a set of knives that were partial tang, with a glued in blade! Awful! They did not last!)
7) VERY comfortable to hold! I had carpal tunnel surgery in both hands 12 years ago, and handle comfort is REALLY important to me.

Cons:
No problems with this knife! I am super impressed!!!

I worked in the food service industry, as a catering manager for 13 years (business dining contracts), and I was always impressed with the high quality knives the chef's would use. They were expensive tools of the trade, and they treated them with respect. They always hand washed them, never let the other kitchen staff borrow them, and carried them to and from work in special fold-over knife cases. I've always had a cheap set of knives at home, and now I'm slowly replacing the old knives I've had for over ten years with QUALITY knives. It's such a joy to use premium kitchen tools like this Santoku knife!

SPECS:
The handles are made from military grade G10 Garolite which is an ultra-premium material specifically chosen due to its superior mechanical properties which include its resistance to heat, cold, moisture and impact.
(Note: G10 is a glass-reinforced resin material. Originally used as a base for circuit boards, and then used for handles. VERY strong!)

Made from Japanese VG10 and is imported directly from Takefu in Japan. The blade consists of a center VG10 cutting core which is then protected by 33-layer per side of SUS410 High Carbon Stainless Steel. (67 layers in total)

Overall, this is a lovely knife that is gift quality (and comes in a pretty box too!) This is a high quality knife that's a perfect addition to anyone's kitchen. I don't work in the catering business anymore, but now I own the kind of knife that top chefs use! I may be cooking for just my family now, but it's a lot more fun when you have a knife like THIS to use! I certainly appreciate a sharp blade and an ergonomically friendly handle.
