Pho Ga Nguyet is a Michelin Bib Gourmand chicken pho specialist that's open till late in Hanoi. We ordered both their dry and soup chicken pho with extra chicken thigh meat and offal, including cock's comb (the thing on a rooster's head).
The soup one has good flavor but presents as mild and bland.
The dry version is better but in general, Northern Vietnamese food isn't powerfully flavorful but more refined.
There are a lot of interesting chicken (?) innards which I'm not familiar with. Very interesting. I like the option of unlaid eggs too.
Food here in Hanoi is surprisingly expensive with each bowl being over RM23 at a normal street eatery. It's good but the ratio of the bowls with added meat is off, with almost more meat than noodles. I'll recommend the normal bowls instead.
