• INGREDIENTS for 2 servings:
2 salmon fillets, 200g each
1 zucchini
1 yellow bell pepper
2 garlic cloves
5 mint leaves
extra virgin olive oil, as needed
fine salt, to taste
black pepper, to taste
• INSTRUCTIONS:
Clean the garlic, remove the core, and roughly chop it. Put it in a bowl with the salmon. Add the hand-torn mint leaves and olive oil, then massage to marinate. Let it marinate while you prepare the vegetables. After washing and cleaning them, slice the zucchini into thin pieces (a few millimeters thick), and cut the yellow bell pepper into thick strips (a few centimeters wide).
Heat a grill and place the vegetables and salmon on it, cooking for a few minutes on each side until properly cooked. Turn them over only when needed.
Finish with mint, salt, and black pepper.
