Chicken Quesadillas On The Blackstone Griddle
What You Will Need:
3 boneless skinless chicken breasts
Seasoning for the chicken - garlic powder, onion powder, paprika, parsley, salt, pepper (to taste)
4-5 large flour tortilla shells
Colby jack shredded cheese
Quesadilla sauce (1/2 cup mayonnaise, 1/4 teaspoon cayenne pepper, 1/4 teaspoon garlic powder, 1 teaspoon sugar, 1 teaspoon cumin and 1 teaspoon paprika)
Set the griddle to medium heat and add a thin coat of olive oil.
Lay seasoned chicken on griddle and cook 3-4 minutes per side and then check temperature.
Once chicken reaches 165 degrees, remove from griddle and set aside to rest for 10 minutes.
Combine mayonnaise, cayenne pepper, garlic powder, sugar, cumin and paprika and mix well to make your quesadilla sauce.
Coat flour tortilla with quesadilla sauce mixture and add sliced chicken.
Cover chicken with colby jack cheese and fold quesadilla.
Put back on griddle until tortilla is browned and cheese is melted (flipping every 15-20 seconds).
Slice browned quesadilla into 4 sections and serve with salsa and sour cream.
