Hi, I'm Ula Robertson Neumann and I'm Chef and Owner of At Your Service NY Catering located in Rockland County, New York. Today, I'm showing you how how to make a California chicken salad recipe. And here's what we need for it: the juice of one lime or lemon, one eighth of a teaspoon of salt and half a teaspoon of pepper. So, now you will probably ask yourself why is salt and so much pepper? And the reason why is we have two other ingredients that are already salted, that's the grilled chicken breast and the toasted pumpkin seeds. And a little bit more pepper because we have some sweet ingredients in there like the, the prunes and the apricots so it will be nice, sweet and spicy. We also need one tablespoon of olive oil, two large California prunes pitted, a half, half of tomato diced, some apricots sliced, some red onions sliced, two scallions sliced, a cup of grilled chicken breast and toasted pumpkin seeds about half a cup. So, the first thing to do is take the lime juice, salt and pepper and the olive oil. Stir these ingredients together to make a simple salad sauce and then all the other ingredients go in; the prunes, the tomatoes; oops, I got those too; the apricots and the onions. And go the scallions and the pumpkin seeds. I'm ready to serve. Top it off with some sliced grilled chicken and voila, here you have a California chicken salad the Ulala way.
