We have used carrots, onion, green bean, tomatoes, bell peeprs but of course you could be adding cucumber, mushrooms or in fact whatever you liked. Chickpeas, black eyed pea and red kidney beans are our choice of pulses. The dreesing is super eay, olive oil, lemon juice, lemon zest, cumin powder and garlic. A big handful of fresh mint in the mix and we are done. Enjoy.
