How to Make Profiteroles at Home Recipe
The Spice City recipe for a special dessert, profiteroles.
Ingredients:
For the dough:
100ml (3.5oz) water
60g (2.1oz) butter
1 tsp sugar
salt
90g (3.2oz) eggs
45g (1.6oz) flour
For chocolate cream:
200ml (7oz) milk
100ml (3.5oz) water
50g (1.7oz) sugar
23g (0.8oz) flour
15g (0.5oz) cocoa powder
10g (0.3oz) butter
25g (0.9oz) chocolate
hazelnuts
For vanilla cream:
300ml (10oz) milk
50g (1.7oz) vanilla sugar
1 egg yolk
15g (0.5oz) flour
8g (0.3oz) corn starch
5g (0.17oz) vanilla essence
10g (0.35oz) butter
Recipe:
To make the dough: mix the water with sugar, a pinch of salt and butter and let it on the stove on medium heat untill the butter is melted. Turn the heat to low and add the flour and stir for 2-3 minutes. Let the dough cool. When it gets to room temperature you can put it into a pipping bag and form tiny swirls of dough on the backing paper. The dough quantity should be enough for 15-16 pieces of profiteroles. Bake them for 20 minutes or untill they get a nice brown color at 200ºC (392ºF). Do not open the door of your oven while they are backing!
To make the chocolate cream: Mix the milk with the water, sugar, flour and cocoa. Cook it at medium temperature and keep stiring untill it thickens. At the end add the butter and the chocolate and stir untill they melt. Let the cream cool.
To make the vanilla cream: mix the milk with the vanilla sugar, the egg yolk, the flour, the corn starch and the vanilla essence and cook them while continuing stiring untill the composition becomes thick. Add the butter and and stir to melt it. Let the cream cool.
Take each piece of profiterole and fill it with the vanilla cream as shown in the video. After you fill it, dip the upper part in the chocolate cream and then in crushed nuts. Good appetite!
