Beer, Brats, & Bsauerkraut — a welcome combo at any summer cookout.
Hey guys, welcome back to the next Slow 100 video! Today, I'll be making a quick cheater version of everyone's favorite German condiment: sauerkraut. Sauerkraut is a traditional food hailing from Germany made from lacto-fermented cabbage. Its characteristic sour bite adds a great acidic component to many dishes, traditional and otherwise.
Sauerkraut is typically made by allowing brined cabbage to sit undisturbed for a week or two, allowing a variety of beneficial bacteria to grow and ferment and preserve the cabbage. Humans have been fermenting foods as an ancient way to preserve seasonal vegetables as well as a beneficial addition to gut health!

This recipe is for those who want that delicious tangy kraut flavor on the fly. It isn't fermented so you won't get the benefit of live cultures found in the real stuff, but it's a good imitation! This one is closer to a vinegar pickle.
Those with keen eyes may have caught that I didn't use caraway seeds. I made this video partially as a recipe you can make with leftovers (I had most of a head of cabbage leftover from another dish I made the day before) and didn't want to be wasteful. I didn't have caraway seeds on hand, so I substituted crushed coriander seeds. The subtle, earthy spice from the coriander is a nice change-up for traditional sauerkraut flavors.

Ingredients
- Cabbage, 1
- Salt, 1 tbsp
- Caraway seeds, 1 tsp
- Vinegar, 1 cup
- Water, 1 cup
Directions
1. Core and shred cabbage
2. Add all ingredients to a large pot & bring to boil, stir
3. Cover, reduce, simmer for 30-45 mins — add water if gets too dry
4. Serve warm or chilled
