My freshman year in college I had an older roommate who was dating this Russian guy. She made him piroshki and borscht one time, and everyone in our apartment got to partake. I was upset that it had taken me 18 years to taste food that was that mind blowing. They broke up shortly after, but I still remember that meal and the relationship advice she used to give me.

Dough recipe:

Filling:
1 lb LEAN AF ground beef
1 medium onion, diced
1 tsp salt
Pepper
Onion powder
Garlic powder
Handful of sharp cheddar cheese
1/4 cup grated parmesan (added off camera)
Note: I used what I had on hand. I saw other recipes using sautéed mushrooms, cooked rice, dill, scallions, etc. I’m assuming as long as your filling is on the dryer side, you can cram it in these dough pockets. Do you boo boo.
1. Place dough on a lightly floured surface, split it up into 20 portions, form them into balls, let rest for 10 minutes under a damp towel
2. Roll into 4” circles, add 2 Tb of filling, pinch edges closed until you have a half moon, tuck in the ends, place seam down
3. Heat up 1.5” of frying oil in a high walled pan over medium heat and fry the piroshki until lightly golden. Flip them as they cook, although mine didn’t seem to want to flip 🤷🏻♀️
