ദക്ഷിണേന്ത്യയിലെ ഏറ്റവും പ്രധാന ഭക്ഷണമാണ് അരി. മലയാളികളുടെ കാര്യമെടുത്താൽ ദിവസത്തിൽ ഒരുനേരമെങ്കിലും അരി ഭക്ഷണങ്ങൾ കഴിക്കാത്തവരായി ആരുമുണ്ടാകില്ല. മലയാളികളുടെ മാത്രമല്ല ലോകമെമ്പാടുമുള്ള ഭൂരിഭാഗം ജനങ്ങളും കഴിക്കുന്ന പ്രധാനപ്പെട്ട ധാന്യങ്ങളിൽ ഒന്നാണ് അരി.
വിപണിയില്‍ ഇന്ന് പലതരത്തിലുള്ള അരികള്‍ ലഭ്യമാണ്. മട്ട, കുറുവ, പൊന്നി, ജയ അങ്ങനെ പല തരത്തിലുള്ള അരികള്‍ മലയാളികള്‍ ഉപയോഗിക്കുന്നു. എന്നാല്‍ ഇവിടെ നമുക്കിതിനെ രണ്ടായി തരംതിരിക്കാം, വെളുത്ത അരിയും തവിട്ട് അരി അഥവാ ബ്രൗണ്‍ റൈസും.
വെളുത്ത അരിയാണ് ഇന്ന് കൂടുതൽ ആളുകളും കഴിക്കാനായി ഉപയോഗിക്കുന്നത്. ഇത്തരത്തിൽ നമുക്ക് ലഭിക്കുന്ന വെള്ള അരി സംസ്ക്കരിച്ചെടുത്തതും ശുദ്ധീകരണ പ്രക്രിയയിലൂടെ കടന്നുപോവുകയും ചെയ്യുന്ന ഒന്നാണ്. ഇതിൽ കാർബോഹൈഡ്രേറ്റുകൾ ഉയർന്ന അളവിൽ അടങ്ങിയിട്ടുണ്ടാകും. ഗ്ലൈസെമിക് സൂചികയിലും ഇവ ഉയർന്നതാണ്. ഇത്തരം അരിയിൽ നിന്ന് പോഷക ഗുണമുള്ള തവിടിന്റെ പാളികൾ നീക്കം ചെയ്യുന്നു.

പോഷകങ്ങൾ ഫിൽട്ടർ ചെയ്തെടുക്കുന്നവയാണ് ഇത്തരത്തിൽ വെള്ള അരി എന്നു വേണമെങ്കിൽ പറയാം. ഇത്തരം അരിയിൽ സ്വാഭാവികമായും പോഷകങ്ങൾ കുറവുള്ള എൻഡോസ്‌പെർം (endosperm) മാത്രമാണ് അവശേഷിക്കുന്നത്. പോഷകാഹാര നില കുറഞ്ഞ ഇത്തരം വെളുത്ത അരി അടിസ്ഥാനപരമായി ശൂന്യമായ കലോറിയുടെ ഉറവിടമാണ് പറയേണ്ടിവരും.
പ്രമേഹവും, ഹൃദയ സംബന്ധമായ രോഗങ്ങൾ, പൊണ്ണത്തടി, പക്ഷാഘാതം, ഫാറ്റി ലിവർ, കൊളെസ്ട്രോൾ, യൂറിക് ആസിഡ് തുടങ്ങി എല്ലാ അസുഖങ്ങളുടെയും മുഖ്യ കരണക്കാരനാണ് ഈ വെളുത്ത അരി. വെളുത്ത അരി കഴിക്കുന്നത് കുറയ്ക്കുകയും അതിനു പകരമായി ബ്രൗൺ അരി ഉൾപ്പെടുത്തുക. പിന്നെ വേറൊരു കാര്യം ബ്രൗൺ അരി കഴിക്കുന്നതെങ്കിൽ തന്നെയും നിങ്ങളിത് അമിതമായ അളവിൽ കഴിക്കുന്നില്ലെന്ന് ഉറപ്പാക്കേണ്ടതുണ്ട്.
