EQUIPMENT:
2 Small bowls
Small sauce pot
Large oven-proof sauté pan
Colander
FROM YOUR PANTRY:
Olive oil
Salt
Black pepper
Aluminum foil
INGREDIENTS:
12 Baby French carrots
2 Green onions
2 Garlic cloves
1pkt Chicken stock
1 Chicken, quartered
1can Chickpeas
2tbsp Harissa
1tbsp Sherry vinegar
3pkts Honey
2tbsp Chopped roasted almonds
1. PREP THE INGREDIENTS
- Preheat the oven to 400o.
- Slice the carrots in half lengthwise. Set aside.
- Slice the green onions. Separate the white parts from the green parts. Set aside.- Finely chop the garlic. Set aside.-
In a small bowl, combine the chicken stock with 1 cup of water. Mix well. Set aside.
2. ROAST THE CHICKEN
- Pat dry the chicken with paper towels. Season with 1⁄4 teaspoon each of salt and pepper.
- In a large oven-proof sauté pan add 2 tablespoons of olive oil and bring to medium-high heat. When hot, add the chicken, skin side down, and sear for 3 to 4 minutes, undisturbed. Turn the chicken over and cook for 2 more minutes.
- Add the carrots and chicken stock. Stir. Place in the oven and roast for 25 minutes. (USDA recommends cooking poultry to a minimum 165°F)
3. HARISSA CHICKPEAS- Drain and rinse the chickpeas in a colander.
- Bring a small sauce pot to medium heat. Add the chickpeas, harissa, garlic, white part of the green onions, and 1⁄4 cup of water. Stir to combine all ingredients. Cook until sauce is thickened into a stew-like consistency.
4. HONEY DRESSING- In a small bowl, combine the sherry vinegar, honey, and green parts of the green onions. Mix to combine.
5. SLICE THE CHICKEN- Allow the chicken to rest for 5 minutes after roasting.- Slice the chicken into 1⁄2-inch slices.
6. SERVE & ENJOY- Serve the chicken and carrots evenly between two plates.
-Top with the harissa-chickpea mixture.
- Drizzle a teaspoon of olive oil over each plate.
- Garnish with the honey dressing and almonds.
- Enjoy!
