Today's Recipe
Tomato Rice
Ingredients:
2 tbsp Ghee
1 tsp cumin / jeera
few curry leaves
1 onion (finely chopped)
1 tbsp ginger (finely chopped)
1 tbsp garlic (finely chopped)
3 tomato (finely chopped)
1 tsp Garam masala
1 tsp chilli powder
100 gm green pea
Salt to taste
100 gm Basmati rice ( Soaked for 30min)
2 tbsp coriander (finely chopped)
Method:
firstly, in a large kadai heat 2 tbsp ghee add ½ tsp cumin let it splutter
now add 1 tbsp ginger, garlic, 1 onion, and saute well.
also, add 3 tomatoes and saute for a minute.
cover and cook until tomatoes turn soft and mushy.
further, garam masala, chilli powder and 1 tsp salt.
saute until spices turn aromatic.
add in rice, coriander leaves and mix well, add water
cover and cook on low flame for minutes or until rice is cooked and flavours are absorbed.
Uncover can give it a gentle toss.
garnish with coriander leaves, mint.
finally, enjoy tomato rice with raita.
