INGREDIENTS:
CAKE BASE:
* 1 cup - Cake flour
* 1/2 cup - Sugar
* 1 tsp - Baking Powder
* 1/4 tsp - Salt
* 2 tbsp - Powdered milk
* 4 pcs - Egg yolks (Large)
* 1/4 cup - Water
* 1/4 cup - Vegetable/Canola Oil
1 tsp - Ube flavor Enhancer/Coloring (optional)
1 tsp - Vanilla extract
MERINGUE:
* 4 - Eggwhites
* 1/2 cup - Sugar
* 1/2 tsp - Vinegar
FROSTING:
* 1 can - Condensed milk
* 1 cup - Evaporated milk
* 2 - Eggyolks
* 1 tbsp - Vanilla extract
* 2 tbsp - Conrstarch
* 1 tsp - Butter
TOPPINGS:
* Cheese
* Ube Halaya (optional)
PROCEDURES:
Cake Batter:
1. Combine cake flour, sugar, salt, baking powder and powdered milk.
2. On a separate bowl, combine eggyolks, water, oil and vanilla extract.
3. Combine Dry ingredients to Wet ingredients. (set aside)
4. On a separate mixing bowl, beat the egg whites using an electric mixer until foamy.
5. Add vinegar until soft peaks form.
6. Gradually add sugar while mixing.
7. Once the meringue is ready, fold in the cake batter/mixture.
(Divide the mixture into 2 parts, the other half is for the Ube part. You can use atleast 1tsp of the ube flavor. You can adjust the measurement depending on the taste/aroma.)
8. Once done, pour the cake batter into the pans/molder. (Intead of using wax paper, I used Glassine paper.. if you don't have any of these, you can grease your molder/s with oil and sprinkle it with flour before pouring the cake mixture. You need to do this so that you can remove your cake from the molder/s easily.)
9. Steam for 20-25 minutes on a medium low heat.
Frosting:
1. Combine all the ingredients except the CHEESE!
2. Mix well and continue stirring until it gets thick. (low medium heat)
3. When mixture is already thick, turn off the heat and let it cool. Set aside.

Once the cake is done, do not remove the cake yet from the steamer. Allow it to set for about 10 minutes inside the steamer and with lid on it to avoid shrinking.
Suggestion: I prefer to use Ube flavoring instead of Halaya to minimize the expenses. But make sure, to use UBE FLAVOR aside from the violet food coloring kasi it won't taste ube at all. Chiffon cake pa rin ang lasa kaso kulay ube lang.. So make sure to use ube-flavoring if wala kayo ube halaya. :)
