Today I am sharing how to make a Plant-Based Vegan Gazpacho Soup. This recipe is simple and easy to make. A perfect healthy weight loss meal, loaded with antioxidants and fresh ingredients. Perfect summertime soup, pack-n-go lunch or dinner appetizer idea.

⇸Ingredients
4 Ripe Tomatoes
2 Celery Stalks
1 Cucumber
¼ cup Apple Cider Vinegar
¼ cup Extra Virgin Olive Oil
¼ cup Salsa
Handful of Cilantro
Red Pepper Seed

How To Make
1. Prep all the vegetables, chop them up a bit.
2. Place tomatoes into a blender. Pulse for a few seconds
3.Then add in all the ingredients and blend for 10 seconds.
4. Then place the soup into the fridge for 2 hours.
5.About 15 minutes before you will serve the soup, place bowls into freezer to chill them a bit.
6.Garnish with cilantro, plant-based yogurt, cucumbers and avocado
7.Enjoy :)
