Baking pork tenderloin. It can be sooo good. Or SOOOOO bad. The difference is in a few simple techniques which I demonstrate here. Most important is to use high heat. Starting on top of the stove a high heat sear gives the tenderloin a flavorful crust and a great texture.
Then the baking part is also high heat...forget 300 degrees. These are cookies! A 400+ degree oven, I move the whole oven proof plan into the stove, for about 10 minutes, and you'll get the center to 140 degree. Perfect med-well for pork.
Given these methods a try, and I guarantee that your baked pork tenderloin will come out great every time.
