Chicken pot pie is delicious and economical for the low-income or frugal home. Packing protein, vegetables, & carbs makes it an all in one meal. We can learn so much by just trying to do things ourselves. I hope you’ve enjoyed this video of me learning new pie crust skills.
Basic Pie Crust:
1 cup (2 sticks) unsalted butter or fat of choice
2 ¼ cups all-purpose flour
1 teaspoon salt8 to 10 tablespoons ice water
Roux:
2 tbsp fat
1/2 cup flour
2 - 2 1/2 cups milk or water
Filling:
1 lb of chicken (or meat of choice)
1/2 onion
2 1/2 cups mixed vegetables
Garlic paste
Salt
Pepper
Oregano, Thyme, Basil
I do not measure my herbs. I add and then taste to adjust for personal preference.
Bake the pie at 375°F for approximately 35 minutes or until crust is turning golden and gravy is bubbling.
