Today I made a cup of Masala Chai which literally means Spiced Tea, to warm up myself since it's I can't get out to my favourite Indian restaurant to get myself some tea. “Masala” means a mix of spices in Indian, and in India, each family will have their own blends of spices to make curry, and that's what we call "garam masala". To make this "Masala Chai", you simply boil the tea with some spice and ginger, add some milk and then sweeten it with some sugar or honey, it's that simple. Some people prefer to cook the tea without water, using only milk but I find it difficult to properly extract the flavours from the tea in such method, so I tried to find the prefect balance between water to milk, and it hits the spot, you get robust flavours and creaminess at the same time. 因為行動管制令而無法出門光顧平常愛去的印度餐廳,所以今天做了一杯印度香料奶茶來暖和一下。「Masala」指的是「綜合香料」。據說在印度家家戶戶有自己獨特的綜合香料配方,用來煮咖哩,叫「Garam Masala」。這個印度香料奶茶的做法很簡單,你只需要用水把茶和香料、薑一起熬煮,加入牛奶和糖或蜂蜜,再煮一煮就好了。有的教學會叫你只用牛奶,不用水。但我發現這樣比較難把茶的風味盡數萃取出來,於是我嘗試尋找「水」和「牛奶」的最佳比例,以便同時獲得「飽滿風味」和「滑順口感」。最後,我盡量拍得比較好看些,或許有的朋友只看不煮,也歡迎點個贊。希望大家喜歡。:)
