Dhaba Ki Khichdi
If you roam around in Gujarat; you will get this kind of knichdi in dhaba. Enjoy at home.
Ingredients :
1 tsp oil
1 tsp ghee
1 cup rice
1 cup mix dal
3 cloves(laung)
2-3 pieces of cinnamon stick(dalchini)
1 tsp cumin seeds(jeera)
Some curry leaves
A pinch of asafoetida powder
2 cup finely chopped mix vegetables
Some dry peanuts
1.5 tsp red chilli powder(Kashmiri)
1 tsp turmeric powder
Salt as per taste
1 cup rice
1 cup mix dal(split green lentils- chilka moong dal, pigeon pea seeds - toor dal, yellow lentils - moong dal, orange lentils - masur dal)
2 cup water
Some finely chopped spring onions
1/2 tsp garam masala
2 dry red chillies
Method :
Heat up the pressure cooker
Add 1 tsp oil and 1 tsp ghee
Add 3 cloves(laung)
Add 2-3 pieces of cinnamon stick(dalchini)
Add 1/2 tsp cumin seeds(jeera)
Add some curry leaves
Add a pinch of asafoetida powder
Add 2 cup finely chopped mix vegetables(cauliflower, capsicum, carrot, onion, garlic, green chillies, brinjal, potato) and some green peas
Add some dry peanuts
Add 1 tsp red chilli powder(Kashmiri)
Add 1 tsp turmeric powder and mix it well
Add salt as per taste
Further add 1 cup rice(soaked in water for 1 hour)
Add 1 cup mix dal soaked in water for 1 hour(split green lentils- chilka moong dal, pigeon pea seeds - toor dal, yellow lentils - moong dal, orange lentils - masur dal)
Add 2 cup water and mix it.
Fix the lid and cook it up to two whistles
Add some finely chopped spring onions once it is cooked.
Further for tempering heat up the pan,
Add 1/2 tsp ghee
Add 1/2 tsp cumin seeds(jeera)
Add 1/2 tsp red chilli powder(Kashmiri)
Add less than 1/2 tsp garam masala
Add 2 dry red chillies and mix it.
Serve it warm in a bowl and add tempering(tadka) on it.
Here's your desi dhaba style Khichdi is ready.
