Learn how to make a delicious and versatile Tzatziki sauce.
Can be used as a condiment or dipping sauce.
Tzatziki Greek Yogurt Garlic Sauce by Tess's Kitchen
INGREDIENTS:
1 firmly packed cup of shredded cumcumber - drained
2 cups good greek yogurt
2 tsp crushed garlic
2 tbsp fresh lemon juice
pinch salt
lemon zest - optional
dash cayenne - optional
1/2 tsp dill - use 1 tbsp if fresh - optional
can use finely chopped mint as well
Peel cucumber(s) and spoon out the seeds in the middle
just leaving the flesh. Shred cucumber(s) until you
get 1 cup firmly packed cucumbers. Stir in
the pinch of salt and set aside for 10-15 minutes.
You will be amazed at the amount of liquid.
Drain in a mesh strainer and also towel until the
liquid is absorbed.
Mix the greek yogurt, cucumber, garlic, and
lemon juice.
You can add any herb that you wish. Today I split
the recipe in half.
One batch I added 1/4 tsp
lemon zest and cayenne pepper for a little zest.
The other batch I added 1/2 tsp lemon zest and a
1/2 tsp dried dill -did not have any fresh dill
today :(
Refrigerate for at least 3 hours. Overnight is better.
Can serve with pita chips, use as a dip, on burgers
and of the course the classic gyro.
