📕Ingredients:
1large eggplants, cut into small pieces
2 tablespoons olive oil
7 small pearl redonion, chopped
5 garlic cloves, minced
2 teaspoons paprika

1 can (14.5 ounces) fresh tomatoes
Salt and ground black pepper
6 large eggs
Fresh parsley, chopped, for garnish
Spring onion ,chopped, for garnish
Instructions:
Preheat oven to 400°F.
Arrange the eggplant add cherry tomatoes,onion and minced garlic mix all together drizzle
with olive oil, and season with salt and black pepper.add paprika and cumin or you can add any spices of your choice
Roast in the oven for 15-20 minutes, add the tomato sauce and back to the oven for 5-6 min/ to your desired level of doneness
Sprinkle with fresh parsley and spring onion before serving.
