Ingredients:
1 cup besan / gram flour
1/2 cup maida / all purpose flour
3/4 cup ghee / clarified butter
1 cup granulated sugar
1/2 cup water
1/2 tsp lemon juice
1 tsp cardamom / elaichi powder
Some sliced pistachios and Almonds to garnish
Notes:
1. Do not roast the besan on high heat.
2. Sugar syrup’s consistency should be just right otherwise soan papdi will be chewy.
3. Lemon juice protects the syrup from crystallization.
4. Store soan papdi in an airtight container.
