Palada is the traditional dessert which is inevitable for every Kerala Sadya. It's a traditional payasam which is smooth and silky in texture. It has only 3 ingredients milk, sugar and ada, which is made of rice batter.
Method
Milk -3 litres
Ada - 400 gms
Sugar - 1 cup + 4 tbsp
Add 2 litres of milk to a pressure cooker and add 4 tbsp of sugar. Boil the milk and let the sugar melt. Close the lid of the pressure cooker and let it cook on low for 1 and half hours.
Meanwhile clean the ada and cook it in 1 litre of milk plus half cup water. It will take 15-20 mins to cook. Don't add sugar until ada is cooked.
Add the cooked milk to the cooked add and let it cook together for another 15-20 mins. When it is 80% done add sugar. Add 1 to 1 and half cups depending on your taste. Turn off the flame a few mins before it reach the desired consistency. After half an hour the payasam will get to the right consistency.
