INGREDIENTS AND MEASUREMENTS:⬇️

Potato buns:
-3 1/4 cups bread flour(390g)
-2 Tbsp granulated sugar
-2 tsp kosher salt
-2/3 cup cooked russet potato(5oz)
-1/2 cup whole milk
-1/3 cup water
-2 tsp active dry yeast
-2 egg yolks
-4 Tbsp unsalted butter(softened)
-Potato starch for dusting(optional)

Burger sauce:
-1/2 cup mayonnaise
-1/4 cup ketchup
-1 Tbsp dijon mustard
-1 tsp soy sauce
-1 tsp Worcestershire sauce
-1 finley diced dill pickle(1/4 cup)
-1 tsp garlic powder
-1 tsp paprika
-pinch of salt

Caramelized onions:
-2 large yellow onions
-2 Tbsp unsalted butter
-1 tsp kosher salt
-1 tsp granulated sugar
-water for deglazing
