How to make the most flavorful roasted chicken leg quarters ever:
Ingredients:
10 leg quarters
Chili flakes
Black pepper
Cayenne powder
Oregano
Cumin
Parsley
Sumac
4 garlic cloves
Salt 1 tbsp
Lemon juice 1.5 lemons used
Half can of tomato paste
3/4 cup olive oil
Instructions:
Wash and prep the chicken leg quarters; remove excess fat & then dry them with paper towel. Season with chili flakes, black pepper, cayenne powder, oregano, cumin, parsley, sumac; I used my heart to measure the amount. Add fresh chopped garlic, 1 tbsp of salt, juice of 1 and half of a lemon, half of a small can of tomato paste, and 3/4 cup of olive oil. Mix everything really well. You can marinate for as long as you want or cook it right away. Preheat the oven to 350 degrees. Lay parchment paper on a pan and put down the chicken (make sure it’s not overcrowded) skin side up. Cook for 25 mins and then increase the temperature to 400 (I reapplied some of the sauce on the chicken using a brush) and let it continue cooking again for 20 minutes. Take it out of the oven and then enjoy! Serve with basmati rice or any rice of your choosing. Thank you for watching! Please don’t forget to like and follow!
