Yacon or Ground-apple (Smallanthus sonchifolius) is an easy care perennial daisy that originated in South America. This tall growing plant with edible tubers is perfect for a sunny spot in your Melbourne garden. Yacon is a traditional permaculture plant and categorised into the root/rhizome layer of a food forest. Karen shows us which tubers to harvest and eat and which tubers are replanted to continue growing next season. This juicy crisp vegetable is cooling and perfect to eat in summer salads. A summer harvest is possible if we 'bandicoots' the yacon to collect young tubers. In Melbourne the main harvest is in winter. Karen shows us the 'mother' tuber which the plant grows from and the 'daughter' tuber which is the part we eat.
