I couldn't find a command that gives the pig infinite health so just use:
/effect give @e[type=pig] minecraft:regeneration 999999 255 true
^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^
make sure to use that command after spawning the pig.
