Today I'm making shitake mushroom tofu. I had a dish similar to this at a restaurant the other day but they used pork mince.
I wanted a quick meal and actually didn't have any meat in the house and so a somewhat meatless version it is. If i could do this differently I would skip the ginger. I felt like it didn't need it and I would've loved it more garlicky.
Ingredients
sauce
1 tbsp oyster sauce
1 tbsp soy sauce
1/2 tsp sugar
1/4 tsp salt
1/4 cup water
1tsp corn starch
3 tsp minced garlic ( 3 cloves-4 cloves)
1.5 tsp minced ginger (I would skip this next time :P )
8-10 small shitake mushrooms (if you buy the bigger ones you likely only need 3-4)
1 cup of hot water to soak the mushrooms - reserve about half the liquid for the sauce.
1 spring onion sliced: to garnish
