Marinated tomatoes:
- 5-6 Roma tomatoes, skinned and deseeded
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tbsp mirin
- 1/2 tsp kelp granules
- 1/2 tsp kombu dashi granules (plant-based)
- 1/2 sheet roasted seaweed
Tofu cream cheese:
- 1 block extra firm tofu
- 1 tbsp nutritional yeast
- 3 tbsp lemon juice
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp iodized salt
Sushi brown rice:
Add 3 tbsp of rice vinegar and 1/2 tsp Monkfruit sweetener to 3 cups of cooked short grain brown rice, mix and cook.
Other ingredients:
- Sushi roasted seaweed sheets, 6-8
- 2 small Persian cucumber, julienned
- 1 avocado, sliced
