Avial ,അവിയല്‍,  is a dish which originated from Kerala. It is a thick mixture of vegetables and coconut, seasoned with coconut oil and curry leaves.
It is one of those traditional dishes of South India without which no feast is complete.It is considered as an important part of Sadya.Preparation of this side dish recipe varies from region to region and may have a little different taste as well.
In this recipe I have used curd as this is how avial was always made in my home.

Here is the Ingredients and Recipie.

INGREDIENTS

Mixed Vegetables, cut into 3 inch long strips

1.   Raw Plantain-1

2.     Carrot-1

3.     Drumstick-1

4.     Pumpkin- A piece

5.     Beans-10

6.     Potato Big-1

7.     Green Chillies-4

8.     Curry Leaves-2 strings

9.   Yogurt-1 Cup/as per taste

10.                Freshly grated coconut-! Cup

11.                Shallots-5-6

12.                Cumin seeds-1/2 Tsp

13.                Turmeric Powder-1/2 Tsp

14.                Coconut Oil

15.                Salt per taste

YOU CAN ADD MORE VEGETABLES AS PER YOUR TASTE.

COOKING PROCEDURE

1.     Place all the cut vegetables into pot along with green chillies, sprinkle some salt, turmeric powder add 1 cup of water.

2.     Keep the flame in high till the water bring to boil.

3.   Meanwhile, grind together – coconut, green chillies, cumin seeds ,shallots(green chillies & some more curry leaves –Optinal) to a coarse paste without adding water.

4.   When the water boiled, turn stove to medium flame. Cover & Cook the vegetables until cooked ¾th.

5.   Now add 1 string Curry leaves & the grounded coconut mixture.

6.   Mix the coconut mixture in gently without breaking the vegetables.

7.    Cook covered for another 2-3 mins by adding required amount of water.

8.   Pour lightly beaten yogurt to this and mix together.

9.   Turn off the flame and add curry leaves & Drizzle the 2 Tsp coconut oil on top.

10.       Cover and keep aside for some times before serving.

 

.The avial will be a bit watery still but it will dry up as the vegetables absorb it as they sit.
