This Rainbow fried rice looks great and tastes great! Enjoy with a side of colorful fruits for an extra colorful meal.
Ready in: 25 minutes
Servings: 4 servings (1 Serving = 1 small bowl)
Ingredients:
1/2 small red onion
1/2 large red bell pepper
1 green onion
2 cloves garlic
2 eggs
1 (5 oz) can chicken, drained (or diced leftover cooked chicken)
1 tsp vegetable oil
3 + 1/2 cup leftover cooked rice
1 + 1/2 tbsp shoyu, low sodium
2 tsp sesame oil
Pinch of white pepper (optional)
Sprinkle of sesame seeds (optional)
½ cup canned corn (optional)
Directions:
1. Remember to practice food safety when cooking!
2. Wash hands for at least 20 seconds with soap and water. Rub produce well with just water.
3. Dice onion and red bell pepper into small pieces. Set aside.
4. Slice green onions and mince garlic. Set aside.
5. Crack eggs into a small bowl and whisk together with a fork.
6. ln a large non-stick pan on medium high heat, heat the vegetable oil
7. Once the oil is warm, add the red onion and bell pepper. Cook for a few minutes, until the bell pepper starts to soften.
8. Add the green onion and garlic. Cook for another minute.
9. Add the egg mixture and scramble it until it is cooked.
10. Add the chicken, rice, shoyu, and corn (if desired). Break up the rice and mix everything together
with a wooden spoon or a silicone spatula.
11. Once everything is mixed together, turn off the heat. Drizzle the rice with sesame oil and mix once more to evenly distribute. lf desired, add a dash of white pepper and top off with sesame seeds.
12. Enjoy your fried rice with a side of fruits for a healthy meal!
Ingredient Swaps:
- Instead of red onion you can use any other onion
- Instead of bell pepper you can use bok choy
- Instead of chicken you can use another protein like tofu, cooked beef, char siu, etc.
