Eggplant Moju
Ingredients
1 KG of fried eggplant
150g small red onions cut into halves
3 Small onion cut into thin pieces
10-15 green chillies
3 TBSP Coconut oil
2 TBSP Tomato sauce
1 TBSP red chilli powder
1 TBSP mustard paste
1TSP ginger garlic paste
1 TBSP sugar
1 TSP black pepper powder
¾ TSP Turmeric powder
Salt
1TBSP Redchilli flakes
2 TBSP Vinegar
pieces of Pandan leaves
Curry leaves
Five cardamoms
piece of cinnamon
Three cloves
Method
To cook, try to use a clay pot
Turn on the stove and add coconut oil to the clay pot
Let it heat a little bit.
First, add curry leaves. Cinnamon, cardamom, cloves and pandan leaves.
Let those fry a little bit.
Now add minced onions.
Reduce the flame.
Now add ginger garlic paste.
Add mustard paste
Add turmeric powder, chilli powder and flakes, black pepper powder
Now add onions and green chillies
Add Vinegar
Now add ketchup and sugar
Now turn the stove
Add fried eggplant
Mix well with the paste
You can store the mojo in a glass bottle or the same sealed pot.
