Copycat Jiffy Cornbread Mix
Ingredients
2/3 cup all- purpose flour
2/3 cup yellow cornmeal
3 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
Sift together all ingredients and store in a plastic airtight container. See notes on how to make muffins, make one 8oz. box of copy cat jiffy mix. Double recipe it you need to to make 2 boxes worth.
Notes:Then ready to use add the following:
To make muffins, add 2 tablespoons vegetable oil or melted butter, 1/3 cup milk and 1 egg. Mix well. If mixture is to thick for you add 1 to 3 more tablespoons of milk. For lumpier muffins, reduce milk to 1/4 cup. Optional Variations: Add 1/2 cup shredded cheese, corn, green chiles, jalapeños bacon or tomatoes.
Preheat oven to 400 degrees, and then spoon into a greased muffin tin and bake for 15-20 minutes at 400 degrees. I like to brush the tops of the cornbread muffins with a-little melted butter before serving them.
The recipe make 10 to 12 muffins if recipe is doubled..
