In this video I show y'all how quick and easy it is to make air fryer cheese enchiladas in only 5 minutes. Nothing could be easier to cook and even easier to cleanup without having to heat up my house with the oven. Mexican-spice seasoned corn tortillas filled with cheese and onions then air fried in just 5 minutes. Garnished with fresh cilantro and tomatoes and served with your favorite Mexican sides.
Shopping List: Servings:
3 enchiladas
3 yellow corn tortillas
/3 cup Canola oil Cooking spray 1
1/2 tsp. cumin
1/2 tsp. chili powder
Salt and pepper to taste
Green chile enchilada sauce
Shredded block cheddar cheese
Diced Roma tomatoes
Roughly chopped cilantro
Directions:
To start, foil-line the air fryer basket, folding up the edges to form a bowl shape.
In a skillet, add the oil, cumin and chili powder.
Bring to small simmer. Dredge each corn tortilla in the hot oil for no more than 2-3 seconds. Just enough to coat and flavor them.
Fill each coated enchilada with a portion of the shredded cheese and diced onions. Fold, tuck and roll seam side down.
Spray the bottom of the foil liner with cooking spray and pre-heat the air fryer on 350 for 3 minutes.
After pre-heating the air fryer, pour just enough enchilada sauce on the bottom of the foil bowl and place each prepared enchilada on top of the sauce then pour more sauce on top of the enchiladas along with cheese. You may have to place something on top of the cheese to keep it from blowing off until it melts.
Cook on 350 for 4-5 minutes or until the cheese is completely melted and the enchiladas are thoroughly warmed through.
Remove the enchiladas from the air fryer by lifting up on the edges of the foil bowl. Garnish with diced tomatoes, fresh cilantro, onions and more cheese, adding more sauce if you like. Serve immediately with your favorite Mexican sides.
