Roasted Acorn Squash
Acorn squash, 1 for every 2 servings
butter (melted), 2 tblsp for each acorn squash
brown sugar, 2 tblsp for each acorn squash
cinnamon for sprinkling
salt
pepper
Preheat oven to 400 F.
Cut each acorn squash in half, scooping out seeds and strings with spoon. Sprinkle each half with salt and pepper and place cut sides down on greased baking pan. Bake in 400F oven for 45 minutes.
Remove from oven and turn cut sides up. Brush each cut side up with melted butter and sprinkle with cinnamon and brown sugar. Place back in the oven for 15 more minutes. Enjoy!!
