PUMPKIN SQUASH VELOUTE

Cook time : 30 min
Servings : 8
Ingredients :
1 pumpkin squash
1 teaspoon of coarse salt
2 quarts of water
Instructions :
1) Coarsely cut the pumpkin in pieces. Peel it & remove the seeds. Then, cut again in smaller pieces, wash and drain them.
2) Put the coarse salt in a big pan with the water, heat up and when the water is boiling, add the pumpkin pieces. Cover partially with a lid & cook at quite high heat for 5 min then at low heat for 25 min.
3) Mix it with a mixer.
4) Serve hot.
This yummy and heartwarming soup is perfect for Halloween time :)
Easy and quick to do, we can reheat it & have it for several days.
We can serve it with some whipped cream or with milk, it's even more delicious !
