This is a test of how a crocodiles armour would hold up to a velociraptors claw. Pig belly (which is thicker than your human belly) is shown for comparison. It gives you an idea how a crocodilians armour would fair against a lion (nile) or tiger (saltwater), in the wild.
Crocodile scutes grow with the crocodile, so they never stop growing and it just becomes thicker over time. In the documentary they were trying to figure out how small velociraptors were able to kill the incredibly armoured ankylosaurus.
Spoiler alert! They were only able to kill smaller ankylosaurus. At young ages their armoured skin wasn't fully developed and easily pierced by the raptors claw!
