The BEST Broccoli Cheddar Soup | COPYCAT Panera Broccoli Cheddar Soup Recipe

INGREDIENTS:
4 cups broccoli florets
1 medium diced onion
2 diced carrots or 1 cup of carrot matchsticks
4 cups chicken broth
2 cups half and half
8 oz. shredded cheddar cheese
1 clove minced garlic
dash of cayenne pepper
1 tsp. chicken bouillon
1/2 cup butter - 1 stick
1/2 cup flour
salt and pepper to taste

In a soup pot on medium heat add butter and melt.
Add onions, cook and stir for 2 minutes.
Add carrots, cook and stir 2 minutes.
Add minced garlic, cook and stir one minute.
Add flour, cook and stir 1-2 minutes.

Add chicken broth, chicken bouillon and dash of cayenne pepper.
Turn heat up and bring to simmer. Cook and occasionally stir for 10 minutes.

Add broccoli florets and stir. Bring back to simmer and cook for 15 minutes
or until broccoli is tender.

Add half and half, stir and cook for 5 minutes.
Turn off heat. Add cheese and stir in until melted.

Serve and enjoy.
