Ingredients:
-2 large potatoes (about 500 grams)
-30g potato starch
-1/2 teaspoon salt
-mozzarella cheese
-oil, for frying
-nori sheets, cut into small squares
For the sweet glazed soy sauce:
-100ml water
-60ml soy sauce
-2 tbsp mirin
-2 tbsp sugar
-1 tbsp potato starch
Instructions:
Cook, peel, and mash the potatoes until smooth. In a bowl, mix mashed potatoes, potato starch and salt to form a dough.
Shape the dough into flat circles and place mozzarella in the center of each.
Fold the dough over the cheese, sealing the edges.
Fry the potato mochi in oil until golden brown and crispy. In a saucepan, combine soy sauce, mirin,sugar and some potato starch. Heat until the sauce thickens slightly.
Drizzle the sweet glazed soy sauce over the fried potato mochi. Wrap each mochi with a square piece of nori.
Serve and enjoy the potato mochi with the nori on the outside.
