Marbled Icing Sugar Cookies - are delicious, gorgeous festive looking cookies that you can make with your kids! They are the best holiday cookies for your family and friends to enjoy! 🤩🤩
Ingredients:
Sugar Cookies:
7.5 oz (210 g) unsalted butter, room temperature
1 cup (200 g) sugar
1 egg
1 egg yolk
1 tsp vanilla extract
2 oz (50 g) heavy cream
17.5 oz (500 g) all-purpose flour
2 tsp baking powder
1/4 tsp salt
Royal Icing:
2 big egg whites
2 cups (250 g) powdered sugar
2 tbsp lemon juice
red and green food coloring
Line two baking sheets with parchment paper.
Beat butter and sugar until light and creamy.
Add egg and egg yolk.
Add vanilla extract and heavy cream and mix well to combine.
In another bowl, combine flour and baking powder.
Add salt to butter mixture and gradually add flour.
Form a dough.
Wrap dough in plastic wrap, flatten it into disc and refrigerate for 2 hours.
Preheat oven to 350 F (180 C)(fan assisted oven).
Divide the dough into 2 parts.
On a floured surface, roll out half of the dough at a time to 3-4 mm thickness, keeping the remaining dough in the refrigerator. Before rolling the dough, lightly flour the dough and the rolling pin.
Cut into desired shapes.
Bake in preheated oven for about 7 minutes or until lightly golden brown on the edges. Allow cookies to cool completely.
Re-roll the remaining dough and continue cutting until all is used.
If the remaining dough gets warm, place it back in the refrigerator for 20-30 minutes and work with the other half of the dough.
To make the icing, beat the egg whites.
With the mixer running on the lowest speed, gradually add powdered sugar.
Add lemon juice and mix well to combine.
Color 2 tbsp of the icing red and another 2 tbsp green.
Drizzle both red and green icing on top of the white one.
Create a marble effect with a toothpick.
Dip the top of the cookies into the icing, clean the edges using a teaspoon, and place them onto a wire rack (or a plate) for the icing to set.
It takes about 24 hours for the icing to set and harden.
*If icing gets too thick before all the cookies are decorated, add about 1/4 tsp of water.
Drizzle more red and green icing on top of the white icing and repeat until all cookies are done.
