Hi folks and welcome to Tony's Comfort Kitchen (Tony's Bits On The Side) This tuna and bean salad or tonno e fagioli is a real cracker and I grew up eating this every summer. You can substitute the white haricot beans for any other beans if you like, so kidney, borlotti, pinto beans are all acceptable alternatives. Simple to make, and the vinaigrette can be used with any other salad too. Enjoy 😋
Ingredients
Salad
280g tinned tuna (400g tin)
400g tinned beans (540g tin)
Handful of halved cherry tomatoes
1/2 red onion thinly sliced
Vinaigrette
150ml vegetable oil
50ml vinegar or lemon juice
1/3 tsp sugar
1 heaped tsp Dijon mustard
1 good pinch of finely chopped flat-leaf parsley
salt and pepper to taste
